Well, Dan, you've started a fine old discussion here over this character. I've never seen it, and no one here - at the university at which I work in Hong Kong - has seen it either; including some experts in Chinese language and literature. The best guess (or the most common I should say) is that it's art and composed of several other characters to mean something none of us can fathom (you can see several characters in there, but others look like artistic fabrications). As for pronunciation... None of us has a clue. Can you put us out of misery and enlighten us? How did you arrive at "biang"? What does it mean? This is important stuff, Dan. People here are demanding answers before it drives them out of their minds :-) If you can't decipher this for us we're going to have to put together a research proposal for money to eat at this place and ask the owner!

the character does not exist in the standard lexicon. I think you are on the right track that it is an artistic invention. Alternatively, it may be a dialect term. I'm stumped. The fact Dan pronounces it 'biang' gives some credence to my dialect theory. Can you describe the dish, Dan? The Sichuanese have a 'bang bang ji' which is a kind of shredded chicken with a peanutty sauce. Could this be a variant? That 'bang' is baseball de 'bang'.

Sorry, guys. Just noticing these comments now. I have alerted Roboo, my contact in Xi'an to these questions. Maybe he'll even tell you the poem he recited to remember how to write this. Unfortunately, I can't be of much help. My spoken Chinese is bad. My written Chinese is worse. I pronounced it "biang" because that's how everyone else did. And no, Prince Roy, it does not taste peanuty at all. And I don't think there is any chicken in it. The noodles are kind of like "pidai" mian -- belt noodles -- that you might find at a Xinjiang restaurant. Yes, Stephen, scrounge up some cash for a research trip to Xi'an. Sure, the Terracotta Warriors are OK. But the real story is "biang biang" mian.

As a Chinese,I myself was surprised when I saw this character for the first time.The word "biang" can't be found in any dictionary. It doesn't exist in the standard lexicon. However,according to what I found out after a little research,it's not an artistic invention,either.This word has been passed on by word of mouth over a thousand years. It's one of the two words coined in Shaanxi province in the history of this ancient city,the other one being "曌zhao" which was coined by Empress Wu Zetian to be used only in her name meaning "the sun and the moon are shining in the sky".The making of the charecter "biang" derived from the local folklore which tells the story of a poor student who went to the local noodle restaurant called "biang biang"(because of the sound when making the noodle) and offered to make the character when he found that he couldn't afford the noodle.He used this character to express his anger about his time. It's said that he was reciting a poem when he wrote,or more precisely,coined this character. Here is the poem:一点飞上大,黄河两边弯;八字大张口,言字往里走,左一扭,右一扭;西一长,东一长,中间加个马大王;心字底,月字旁,留个勾搭挂麻糖;推了车车走咸阳.According to my reference,it describes the geography of China and his time.

Went to a Shaanxi noodle house today in Beijing. Saw this character on the menu. Asked what it was. Owner told me it was "biang biang mian", a common Shaanxi province noodle. I saw it for a second time in a food fair in Oriental Plaza in Beijing. Appears to be a widely used character for these Shaanxi noodles.

Something I should mention is that the character's components have somewhat been simplified in Beijing (I see that the character photographed in Shanghai still has complex components). The components which have been simplified in Beijing: - 长 - 马

It is, in fact a very Shaanxi thing. When I saw it, it had a sun radical, not a knife radical on the end. I'll post again when I can remember that whole saying that goes along with it, but the noodles which the character represent are thick, belt-buckle noodles and are very long (about 2-2.5 meters). They are created by holding the dough on either end and twirling and throwing it around until it gets long enough.
